You need:
2 cloves garlic, finely chopped
¼ cup lemon juice
¼ cup water
1 can chickpeas (garbanzo beans), rinsed & drained (19 oz/540 mls)
½ cup tahini (sesame seed paste, look for it in the natural foods aisle)
1 tsp salt
Here’s how:
Put all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, try adding a dash of hot sauce, a pinch of cayenne pepper, a chopped red chili pepper or a little cumin (about 2 tsps).
Hummus is a popular dish in the Middle East and in Greece. It can be served as part of platter, with bread or vegetables for dipping. It can also be used as an alternative to margarine, butter or mayonnaise in sandwiches.
