Chili, meatless

About 20 servings

4 cans diced tomatoes

4 cans mixed beans

2 cups lentils

2 cups water

2 cans tomato paste (optional)

8 tablespoons oil

4 onions, chopped

12 stalks celery, chopped

8 cloves garlic

4 peppers, chopped

12 carrots, chopped

a couple teaspoons of chilli powder, cumin, and salt

In a large pot, fry the onions, celery, and garlic in the oil until the veggies are soft, about 5 minutes.

Open the cans, drain the beans, and pour them into the pot.

Add the chopped carrots and peppers.

Add the spices as needed and cook for about ½ hour, uncovered, until all of the veggies are cooked.  Adjust the spices.
