Macaroni or Hamburger Soup

Macaroni or Hamburger Soup

This is a traditional Metis soup that can be made in a variety of ways by adding onions, carrots or potatoes. The version here was made in my family and extended family.

8 C water

3 or 4 celery sticks, diced

2 – 28 oz cans stewed tomatoes

2 tsp salt

½ tsp pepper

1 C elbow macaroni

1 lb ground beef

Bring water to a boil; add celery, salt, and pepper.

Reduce heat and add small chunks of ground beef to the pot, cooking for 10 to 15 minutes, and then add the tomatoes.

In another pot, cook the macaroni until it’s about ¾ cooked. Drain and add to soup.

Bring the soup to a boil, reduce heat and simmer for 20 to 25 minutes.
